Cheesecake Cupcake Magic!

So I have been told that I make a mean (or nice) cheesecake cupcake mix! Well I have decided to share it with my blogging friends. Sit back and get ready to make some AWESOMENESS!
You will need
Cheesecake:
25 oz cream cheese (Philadelphia is what I use)
1 cup sugar
1 tsp vanilla (imitation)
5 eggs

Topping:
1.5 cup sour cream (I use daisy)
3/4 cup sugar
1/2 tsp vanilla


Start with small cupcake pans like theses

Place in small cupcake liners

Create the crust.
This is just graham cracker crumbs and butter. Keep add butter to the crumbs until you can pack it down


Pack the crust crumbs into the liners


You can clean up your pan (meaning the crumbs that aren't in the liners) if you want to but if you bake it they will just fall off later. Do not put in the oven just yet.. you need the cheese cake in there first.

This is where you make the cheesecake numminess. 
Mix together cream cheese, sugar, vanilla, and eggs.
Put in the eggs one at a time.

Mhhhm.
If you are like me you will be temped to just eat this. but don't! Oh okay have a sample.

Once all mixed up put in the cupcake liners almost full. 3/4 full


Here you can clean you pan if you want to.

Put in the oven for 30 minutes at 300 degrees.
Remove from oven and cool for 5.

This is the top of the cheesecake. You will want to mix this up while the cheesecake is in the oven for the 30 minute period.

mix together sour cream, sugar, and vanilla

Still in the oven for the first time.

All puffed up.

 Five minutes lets the puffiness go down.


Once cool, put topping on. cover and fill the rest of the liners.



Put in the oven for another 5 minutes.




You are all done.

Once you take them out of the pans and put them on some sort of platter you may put some sort of berries on there to add color. I put raspberries and it is HEAVEN!

It takes me about 1.5 hours to do this. I didn't have all my ingredients at hand, oops! Make sure you do before you start. Makes it all go a lot smoother. :)
